Lemon Cream Pie Martini

I was inspired to make this martini when I read a similar recipe on Food.com.  The concept of layering the drink so it visually simulated a lemon cream pie was genius!  You will love the flavors of this drink.   It's a little fussy...but worth the time!



Drink: 2 oz. Limoncello, 1 oz. Fresh Lemon Juice, 1 oz. Simple Syrup

Cream Layer Mixture: 1 oz. Licor 43, 1 oz. Heavy Cream

Topping: Canned Whipped Cream

Rim: 4 Squares Graham Cracker, Lemon Wedge



Rim: Place graham cracker squares in a blender and pulse until the mixture looks like small crumbs.  Place the crumbs on a plate. Rub the lemon wedge around the rim of the martini glass, then turn the glass over and press the rim into the graham cracker crumbs.  Set the glass aside.  Drink: Prepare the simple syrup by mixing together 1 cup of water with 1 cup of sugar in a small pot.  Heat until the sugar dissolves, then let cool.  To prepare the drink mix, combine the limoncello, fresh lemon juice, and the proper quantity of simple syrup (saving the extra syrup in the refrigerator for future use) in a shaker with ice and shake for 5 seconds, straining the mixture into the glass.  Cream Layer Mixture: Combine the Licor 43 and the heavy cream together.   Pour the cream layer mixture over the limoncello, slowly, over the back of the tablespoon placed against the side of the glass.  Spray about 1 Tbsp. of canned whipped cream over the top of the cream and garnish with lemon peel if desired.
