Fennel Liqueur

We enjoyed this liqueur in Assisi, Italy during our cooking class.  It was incredibly tasty and so easy to make. 


¼ Cup Fennel Fronds

1 Tbsp. Fennel Seeds

2 Cups Vodka

Simple Syrup (1 Cup Sugar and 1 ½ Cups Water)



Combine fennel fronds and fennel seeds in a glass jar with a tight fitting lid, add the vodka, then cover and let steep at room temperature for one week.  When ready, prepare the simple syrup mixture of water and sugar.  In a large pan, over medium heat, combine the water and sugar and stir until the sugar has dissolved, approx. 3 minutes.  Cool completely and set aside.  After 1 week, remove the fennel fronds and the fennel seeds, and add the cooled simple syrup.  Stir to combine.  Store in the freezer.  When ready to enjoy, serve cold with ice.
