Homemade Limoncello

I have experimented making a variety of homemade liquors. Limoncello and Kahlua are my favorites, and are relatively easy to make. They just require time to steep. This is an excellent gift for the holidays…just purchase decorative bottles and plan ahead!

12 Lemons
1 750-ml. Bottle Vodka
3 Cups Water
2 Cups Sugar

Remove the peel from the lemons, making sure that you don’t include the white pith from the lemon (which is bitter). Place the lemon peels in a large pitcher with the vodka, and cover to steep for one week at room temperature. When ready, prepare the simple syrup mixture of water and sugar. In a large pan, over medium heat, combine the water and sugar and stir until the sugar has dissolved, approx. 3 minutes. Cool completely. Pour the sugar mixture into the pitcher with the vodka. Cover and let stand at room temperature overnight. Remove the lemon peels from the vodka mixture and transfer the limoncello to individual, sealed bottles. Refrigerate. The limoncello is best after being refrigerated for an additional week, and will be good if refrigerated for several months.
