This Italian Mojito is a great aperitivo. The fresh basil and lime juice are paired perfectly in this light and refreshing drink.
1 Cup Sugar
1 Cup Water
1 Cup Vodka
3 Limes, Juiced
1 Cup Club Soda
Fresh Basil & Fresh Raspberries for Garnish
Combine the sugar and the water in a small saucepan, stirring until sugar dissolves. Bring mixture to a boil over medium-high heat. Remove from the heat and let cool. When cooled, pour the sugar/water mixture in a pitcher with the vodka, lime juice and club soda. Stir to combine. In the bottom of each glass, place a couple of fresh basil leaves and a lime wedge and muddle (smash the basil leaves and the lime wedge together with either a muddler or the back of a wooden spoon). Cover with ice. Pour the mojito mixture over the ice and enjoy. Garnish with additional basil and fresh raspberries if desired.
