Pineapple Basil Martini

This cocktail is delicious, combining fresh pineapple with basil infused simple syrup and tequila. 



Simple Syrup (1 Cup Water/1 Cup Sugar) & 8-10 Fresh Basil Leaves

2 Cups Fresh Lime Juice

2 Cups Silver Tequila

1 Cup Fresh Pineapple, Cubed

Fresh Basil Leaves (Garnish)



Simple Syrup: Place 1 Cup of Water and 1 Cup of Sugar in a pot and heat until the sugar dissolves (approx. 3-5 minutes).  Add the fresh basil leaves and simmer for 15 minutes.  Let mixture cool and discard basil leaves.  In a large pitcher, add the simple syrup, fresh lime juice and tequila.  Refrigerate until ready to serve.  Place ice cubes in the bottom of the martini glass and fill a cocktail shaker with ice cubes.  Add the cubed pineapple to the cocktail shaker and muddle.  Add the drink mix to the cocktail shaker, and shake for several minutes.  Strain the mixture into the martini glass and serve.  Garnish with fresh pineapple and basil leaves.
