Prosecco with Strawberries & Lemon
I have tried many different combinations of drinks that incorporate Prosecco (Italian Champagne). This combination of fruit with the champagne is really delicious. I often make this in the summer, when strawberries are in season. Feel free to modify to incorporate different fruit combinations that you prefer. 2 Cups Fresh Strawberries
6 Lemon Slices
½ Cup Sugar & ½ Cup Water
1 ½ Cups Crushed Ice
1 750-ml. Bottle Prosecco, Chilled
In a pot over medium heat, combine the sugar and water and bring to a boil. Cook for 2 minutes, then remove from heat and let syrup cool. Place strawberries in serving glasses, and add 1 Tbsp. of syrup to each glass. Mash the strawberries with a muddler or the handle of a wooden spoon. Add a lemon slice to each glass, and mash to release flavor. Add several ice cubes to each glass, then fill with Prosecco. Enjoy.
