This is a very flavorful preparation for flounder. The dish looks beautiful and tastes even better.
1/3 Cup Olive Oil
1 Garlic Clove, Sliced
2-6 oz. Flounder Fillets
1 Tsp. Black Pepper & 1 Tbsp. Fresh Basil, Chopped
1 Cup Clam Juice
4 Littleneck Clams, Cleaned & Scrubbed
4 Mussels, Cleaned & Scrubbed
¾ Cup Marinara Sauce (See recipe) & 4 Fresh Basil Leaves (Garnish)
In a large sauté pan, heat the olive oil. Add the sliced garlic and sauté for 1 minute, until the garlic becomes lightly golden brown. Add the flounder fillets, seasoned with the black pepper and the chopped basil. Saute for 2 minutes. Add the clam juice, littleneck clams and mussels, and cover pan. Cook for approx. 1-2 minutes, then add the marinara sauce and recover the pan. Cook for 3-5 minutes, until the clams and mussels open. Place the mixture on a serving platter and garnish with fresh basil leaves. Serve immediately.
