This dish is basically skewered, seasoned chicken with grape tomatoes and yellow peppers. Any of your favorite vegetables can be added. I have made this dish with sausage as well….just be creative.
Grill Seasoning (See recipe)
2 Chicken Breasts, Boneless & Skinless, Cut into 1” Cubes
1 Pint of Grape Tomatoes & 1 Yellow Bell Pepper, Cut into 1” Cubes
Lemon-Butter Sauce (See recipe) & Fresh Parsley, Chopped (Garnish)
Skewers (If wooden, let sit in water approx. ½ hr. before grilling)
Cut each chicken breast into 1” cubes. Place the chicken in a large mixing bowl along with the grape tomatoes and the cubed yellow bell pepper. Drizzle the ingredients with olive oil and sprinkle liberally with the grill seasoning. Skewer the chicken, grape tomato and pepper in order and place on an outdoor grill over medium heat (make sure the grill grates are lightly oiled). Cook, with the lid closed, approx. 3-4 minutes. Turn the chicken over, and cook for an additional 3-4 minutes, until the chicken has cooked through. Place the chicken skewers on a serving dish, and top with warm lemon-butter sauce. Garnish with fresh chopped parsley if desired.
