Lemon Herb Shrimp Packet

This is an easy preparation….the shrimp cooks quickly and is flavored by the lemon and fresh herbs.



2 lbs. Shrimp, Deveined (Leave Peel on or Remove….your choice)

Salt & Pepper to taste

Fresh Chopped Herbs - Rosemary, Basil, Parsley (1-2 Tbsp. per Package)

12 Lemon Slices (3 per Package)

Extra Virgin Olive Oil

Parchment Paper



Fold 4 (9x13”) pieces of parchment paper in half.  Spray the parchment paper with baking spray, or drizzle with extra virgin olive oil.  Layer the shrimp in the center of the bottom half of each greased parchment paper.  Top with salt and pepper, fresh herbs, lemon slices, and drizzle extra virgin olive oil over the shrimp.   Fold the parchment paper over the shrimp and working from one end of the parchment to the other, keep folding the bottom edge of the paper to crease and seal the packets.  The closure needs to be secure so the steam will not escape.  Place the parchment packages on a baking pan, and place in a preheated 350 degree oven for approx. 20-25 minutes.  When ready, remove the packet from the oven and place on serving dishes.  Each diner can slice open their package and enjoy.
