Aunt Millie's Chocolate Pecan Pie

Pecan pie is one of my Mom’s favorite pies….and the addition of chocolate only enhances the flavors in this recipe.  I remember Aunt Millie bringing this delicious pie to a family gathering.  Enjoy!



¾ Cup Light Corn Syrup

½ Cup Light Brown Sugar

3 Tbsp. Butter, Melted

3 Large Eggs, Room Temperature

1 Tsp. Vanilla Extract

¼ Tsp. Salt

1 ½ Cups Pecan Halves

3 oz. Bittersweet Chocolate, Coarsely Chopped

1 Premade Pie Crust (Deep Dish), Defrosted



In a large mixing bowl, combine the corn syrup and the brown sugar.  Add in the melted butter, then add the eggs in one at a time, stirring until smooth.  Add the vanilla, and salt, and mix well.  Stir in the 1 cup of the pecans and the chocolate.  Pour the mixture into the pie crust.  Decorate the outer edge of the filling with the remaining ½ cup of pecans.  Bake the pie in a preheated 425 degree oven for 15 minutes, then lower the temperature to 350 degrees, and bake for another 15-20 minutes, until the filling is set and doesn’t jiggle.  (If the crust is browning too quickly, place aluminum foil around the outer edge of the pie, leaving the center to cook uncovered).  Serve warm or at room temperature with whipped cream if desired.
