Mom's Pizza Grana (Wheat Pie)
This is Mom’s recipe for the traditional Easter Pie, Pizza Grana. We have enjoyed this dessert during many holiday celebrations. This recipe is unlike many of the traditional recipes for Pizza Grana that require a lot of preparation and many ingredients.
1 Cup Wheat Berries (pre-soaked)**
1 lb. Ricotta Cheese & 3 Eggs
1 Jar Citron, Chopped, ½ Cup Sugar & 1 Tbsp. Vanilla Extract
2 Tbsp. Maraschino Cherries, Chopped Small
2 Tbsp. Hersey Chocolate, Chopped Small
You will need two shells for this recipe.
I purchase a pre-made, rolled pie crust for this recipe, like Pillsbury.
1 Egg, Beaten & 1 Tbsp. Water
In a large mixing bowl, combine all filling ingredients (except for cherries and chocolate). Separately, line a greased pie shell pan with the bottom pie shell. Spoon the filling mixture into the pie shell. Roll out the top crust, and slice in thick strips. Cover the top of the ricotta mixture in a basket weave pattern. Place the chopped cherries and chocolate in areas between the weaved pie crust. Brush top crust with egg wash mixture. Bake in a preheated 350 degree oven for approx. 45 minutes, or until top crust is lightly browned. Let pizza grana cool completely. Place in the refrigerator for up to three days prior to event. When ready, serve at room temperature with sprinkled confectioners sugar if desired. (If presoaked wheat berries are not available, purchase 1 cup of soft wheat berries, rinse and drain. Soak the wheat berries in 3 cups of water, covered, overnight at room temperature. The following day, bring the wheat berries and water to a boil and simmer for approx. 15 minutes. Let sit for 30 minutes and drain.)
