Mom's Rum Balls
This is Mom’s recipe for rum balls. For as long as I can remember, rum balls have always been on our holiday dessert buffet. They are easy to make, and can be rolled in a variety of different toppings.
1 Cup Semi-Sweet Chocolate Chips
½ Cup Coca Cola
3 Tbsp. Light Karo Corn Syrup
1 Tbsp. Rum Extract
2 ½ Cups Vanilla Wafers, Crushed
2 Cups Confectioners Sugar
1 Cup Walnuts, Chopped (optional)
Melt chocolate in a double boiler over medium heat. Remove from heat. (If desired, chocolate chips can be melted in a microwave. Place in a microwaveable bowl with 1 Tbsp. of vegetable oil and microwave for 1 minute and stir. Microwave in 30 second increments until fully melted. Do not overcook or the chocolate will seize). Blend coca cola beverage, corn syrup and rum extract. Stir in crushed wafers, confectioners sugar and chopped walnuts. The mixture will be very sticky. Cover and chill about 2 hours, or until the mixture is stiff enough to handle. Form into balls (about 1 rounded teaspoon). Roll in different colored sprinkles, chopped nuts, etc.
