Fettuccine Alfredo

Fettuccine Alfredo is a delicious, rich pasta dish.  I have made this dish for many special occasions.  Grilled chicken or shrimp can be added to this recipe to make a heartier pasta dish.

½ Cup Butter

1 Pint Heavy Whipping Cream

½ Tsp. Salt

½ Tsp. Pepper

½ Cup Parmesan Cheese, Grated

1 lb. Fettuccine

2 Tbsp. Fresh Parsley, Chopped

Bring a large pot of well salted water to a boil.  Add fettuccine and cook according to package directions (approx. 8-10 minutes for al dente pasta).  Reserve ¼ cup of cooking liquid, then drain and add 1 Tbsp. of butter to the warm pasta to avoid sticking.  Separately, in a saucepan over medium heat, add the remaining butter, whipping cream, salt and pepper, and bring to a simmer for approx. 10 minutes until the sauce has thickened.  Add the reserved cooking liquid if needed to thin sauce.  Remove from the heat and add the parmesan cheese, stirring to combine.  Add the cooked fettuccine pasta to the cream mixture, and top with the chopped parsley.  Serve warm with additional grated parmesan cheese for topping, if desired.
