Homemade Bread

The smell of fresh bread baking in your oven is intoxicating.  I have tried many different versions of homemade bread –this is the winner!  Serve with the delicious whipped pesto butter (See recipe in La Dolce Vita).


2 Cups All Purpose Flour

2 Cups Semolina Flour

1 Tbsp. Fast Rising Yeast

1 ½ Cups Cool Water

1 Tbsp. Fine Ground Sea Salt

Extra Virgin Olive Oil (for greasing bowl to rise bread)



Using a Kitchenaid Mixer (or similar), place the all-purpose flour, the semolina flour, the yeast and the water in the bowl of the mixer.  Mix for 4 minutes on a slow speed (second speed).  Add more water if needed (2 Tbsp. +/-).  Add 1 Tbsp. of salt and mix for 5 additional minutes.  Remove the pizza dough and place in a well greased bowl.  Let rise for approximately 1 hour.  Push the dough down and let it rise for one more hour.  When ready, place in a preheated pot in a 425 degree oven for approximately 40 minutes (covered with a lid).  The dough should be light-medium brown,  If you prefer a darker crust, remove the lid 5 minutes before the bread is done cooking.  Let cool on a wire rack and enjoy.
