Pumpkin Spice Bread

This bread is really delicious, especially for the holidays.  Any type of mix-in can be added to the base, like nuts, chips, dried fruit, etc.  Enjoy!



1 15-oz. Can Pumpkin Puree

4 Eggs

1 Cup Vegetable Oil

2/3 Cup Water

2 Tsp. Vanilla Extract

2 ½ Cups Sugar

3 ½ Cups Flour

2 Tsp. Baking Soda

1 Tsp. Salt

2 Tbsp. Pumpkin Pie Spice


1 Tbsp. Butter, ¼ Cup Brown Sugar, 3 Tbsp. Milk, ¼ Cup Pecans, Chopped



In a large mixing bowl, combine the pumpkin puree, eggs, oil, water, vanilla and sugar.  Add the flour, baking soda, salt and pumpkin pie spice, and mix well until combined.  Pour the batter into well greased loaf pans or individual muffin pans (I tend to use muffin liners).  Bake in a preheated 325 degree oven for approx. 50 minutes, until golden brown and cooked through (a toothpick should come out clean from the center).  Separately, in a small saucepan, mix the butter, brown sugar and milk.  Bring to a simmer and cook for approx. 2 minutes.  Mix in chopped pecans and drizzle on pumpkin bread loaf while it is cooling.  Serve warm or at room temperature.
