Bread Stuffing with Sausage

I have made this sausage stuffing recipe for years.  It’s savory, delicious and filling.  This has been adapted from a Good Housekeeping recipe. 


1 ½ Cups Butter

1 lb. Italian Sausage, Casing Removed

1 Cup Celery, Diced

1 Cup Onion, Diced

¼ Cup Fresh Parsley, Chopped

2 Tsp. Salt

2 Tsp. Poultry Seasoning

½ Tsp. Pepper

18 Cups Fresh Bread Cubes (Any Variety-I like to use Potato Bread)

3 Eggs, Beaten



In an 8-quart pot over medium heat, melt butter.  Add sausage and sauté for approx. 5 minutes until lightly browned.  Remove from pan and let cool, breaking into smaller pieces.  Add the diced celery and onions to the pot and sauté for 5 minutes, until the vegetables begin to soften.  Add the parsley, salt, poultry seasoning and pepper, stirring well to combine flavors.  Return the sausage to the pan and add the bread cubes and beaten eggs.  Mix together well.  Place mixture in a well greased baking pan, and bake in a preheated 350 degree oven for approx. 30 minutes, until lightly brown on top.
