Dad's Clam Chowder

This is a very hearty soup dish.  Dad uses fresh clams that he rakes up in the bay behind his home…it’s hard to simulate that type of freshness!



¼ lb. Bacon, Diced

1 Cup Onion, Chopped

1 Cup Celery, Chopped

1 Cup Carrots, Chopped

1 28-oz. Can Tomatoes, Crushed

1 ½ Cups Water

3 Medium Potatoes, Peeled & Diced

3 Cups Clams with Liquid, Minced

1 Tsp. Salt

1 Tsp. Black Pepper

1 Tsp. Parsley & 1 Tsp. Thyme



Place diced bacon in a large soup pot over medium heat.  Cook until almost crisp, approx. 2 minutes.  Add onions, celery and carrots.  Saute approx. 5 minutes, until vegetables begin to tender.  Stir in tomatoes, water and diced potatoes.  Bring to a boil and cook, uncovered for 20 minutes, or until potatoes are fork tender.  Add in clam juice, clams, salt, pepper, parsley and thyme, and simmer for 10 minutes.
