Italian Chickpea Salad
This is a nice alternative to a mixed green salad. The flavors of the vegetables with a sharp red wine vinaigrette is exceptionally tasty.
1 Cup Grape Tomatoes, Sliced in Half
2 Cups Chickpeas, Drained
1 Cup Black Olives, Pitted & Quartered
1 Cup English Cucumber, Quartered (Leave Skin On)
2 Scallions, Chopped Thin
½ Tsp. Red Pepper Flakes
Good Seasons Italian Salad Dressing (using red wine vinegar)
Place all ingredients in a large mixing bowl and add dressing. Place in a serving bowl and enjoy.
