Italian Green Salad

I always serve a green salad when I entertain.  I like to prepare salads with a variety of ingredients, but I am always reminded that this traditional Italian Green Salad is generally the biggest crowd pleaser.  You can certainly use any mixture of ingredients that you prefer.  The salad dressing below is a simple dressing to prepare.  I often use the Good Seasons Italian salad dressing as a substitute.


2 Cups Romaine Lettuce, Chopped, Washed & Dried

2 Cups Mixed Spring Lettuce Mix, Washed & Dried

1 Cup Arugula, Washed & Dried

1 Pint Grape Tomatoes

1 English Cucumber, Sliced in Small Pieces

12 Pepperoncini Peppers

1 Cup Large Black Olives, Pitted

½ Cup Shredded Parmesan Cheese

1 Cup Garlic Croutons

Salt & Pepper to Taste

Salad Dressing:

6 Tbsp. Extra Virgin Olive Oil

2 Tbsp. Red Wine Vinegar

1 Tbsp. Lemon Juice

1 Tsp. Dried Oregano, ¼ Tsp. Salt & ¼ Tsp. Black Pepper


In a large bowl, combine the romaine, spring lettuce and arugula.  Add the tomatoes, sliced cucumber, pepperoncini peppers and olives.  Top with shredded parmesan cheese and garlic croutons.  In a separate bowl, whisk together the oil, vinegar, lemon juice, oregano, salt and pepper.  Toss the salad with the salad dressing.  Add salt & pepper to taste.
